Ledger prompting me multiple times to send ADA when trying to transact?

Ledger will show everything in every UTXO used when building a transaction. 

So if you need two UTXOs for a transaction and those UTXOs have 2000ADA, 5 NFTs, 2 fungible tokens in them, it will show you everything. It doesn't mean that you're sending all of them to the wallet you're interacting with.
